I really dislike the "we have things in this country that are illegal in other countries (and this is a bad thing but I won't justify why)" argument.

Are you asking for justification of why Ultraprocessed foods are bad?

I'm not really a fan of of that argument either, I find it similar to "Non sugar sweeteners are worse than sugar" with no explanation.

The people often making these arguments, heand it somewhere before, or skimmed the headline of a news article and ran with it.

Ultraprocessed is a very broad term. Lots of things that are ultraprocessed are fine.

I would stick with "meals you make yourself using many basic ingredients" should be your baseline.

A berry smoothy made from kefir, self-harvested blueberries, chia seeds, a tiny bit of natto, and psyllum husk would both be ultraprocessed and homemade :).

Ultraproccessed CAN be a broad term.

But it's gets less broad using this definition.

The commonly used NOVA system places these foods in its most-processed category. They are often made by breaking foods into components—such as starches, oils, protein isolates, and sugars—then recombining them with ingredients that improve flavor, texture, color, shelf life, or convenience.

Common clues on an ingredient list include:
Added flavors, colors, or flavor enhancers
Emulsifiers, stabilizers, thickeners, humectants, or artificial/non-sugar sweeteners
Modified starches, hydrogenated fats, protein isolates, or high-fructose corn syrup
A long list of ingredients, particularly ones you would not ordinarily keep in a kitchen.

Can something be UP and still healthy? Sure, but, that isn't a good reason to start generally getting Americans to eat less of them, it's the correct direction.

Your homemade woth basic ingredients isn't far off, they both aim for the right direction but may allow a few things to slip by.

A few things slipping by is fine. Ultraprocessed is not poison, but can only be a small part of a diet. Similar to alcohol really, except alcohol is a poison (or more correctly, a toxin, hence the need to dilute it before consumption).
